Cuisine & Culture with Linda Civitello
Linda Civitello, author of the award-winning book Cuisine and Culture: A History of Food and People, is with us this week to talk about how history, food and culture shape our diet. Linda developed the curriculum and taught history of food at culinary schools in southern California, and speaks frequently on a wide range of food history topics. Her book is used to teach food history in culinary schools. Linda has spoken at Harvard University, appeared on television on Bizarre Foods and on the BBC. Linda Civitello is the author of another award-winning book, Baking Powder Wars: The Cutthroat Food Fight That Revolutionized Cooking. She also cooks professionally, making historic recipes using heirloom flour, and Italian pastries and gelati for a select clientele. She is currently writing an article on food and racism, and a book on Food and Film from Prohibition to James Bond. Everyone loves its zesty, sweet, and spicy combination of flavors, and it really enlivens a traditional menu. Remember, cranberry sauce keeps forever, so you can make it will ahead of the main event or keep leftovers a few weeks.   1 medium lemon                  One 12-ounce bag fresh or frozen cranberries, rinsed, soft berries discarded       2 cups granulated sugar ½ cup (¼-inch dice) crystallized ginger (about 2½ ounces) ⅓ cup finely chopped yellow onion 1 garlic clove, minced 1 jalapeño pepper, seeded and minced 1 cinnamon stick ½ teaspoon dry mustard ½ teaspoon salt Using a Micrograter or the small holes on a box grater, remove the yellow zest from the lemon. Using a small, sharp paring knife, cut away and discard the thick white pith. Cut the lemon in half horizontally and pick out the seeds with the tip of the knife. Dice the lemon flesh into ¼-inch pieces. In a medium, nonreactive saucepan, combine the cranberries, diced lemon and zest, sugar, ginger, onion, garlic, jalapeno, cinnamon stick, mustard and salt. Bring to a boil over medium heat, stirring often to help dissolve the sugar. Reduce the heat to low and simmer until the sauce is thick and the cranberries have burst, 10 to 15 minutes. Cool completely. (The chutney can be prepared up to 3 weeks ahead, covered tightly and refrigerated.) Remove the cinnamon stick just before serving. We are so excited to have Elizabeth Ann Quirino with us this week to talk about Filipino food, family and, and her blog, The Quirino Kitchen. She has written and indie published three cookbooks: Instant Filipino Recipes: My Mother’s Traditional Philippine Food in a Multicooker Pot, a follow up to My Mother’s Philippine Recipes, a collection of her late mother’s favorite Filipino classic dishes which Betty Ann transformed to everyday cooking in her American kitchen. She has won too many awards to list here. Betty Ann was born and raised in Tarlac, Philippines, and now based in New Jersey, USA. She is also freelance journalist, and food writer. She blogs about Filipino home cooking recipes on her very popular site TheQuirinoKitchen.com. Betty Ann travels often to her home in the Philippines, and throughout Asia, in search of traditional recipes and stories about culture and history. Soup & Bread with Crescent Dragonwagon
We are ever-so-lucky to have the delightful and irrepressible Crescent Dragonwagon back with us to talk about another of her wonderful books out in a new edition. Raghavan Iyer says, “Soup and bread in her capable hands create all the right magic for the body and soul,” and that her “recipes sing with flavor.” Below Crescent shares one of her readers’ favorites (as mentioned in this episode), just in time for autumn For nearly two decades, Dairy Hollow House—an inn and restaurant tucked into the Ozark Mountain resort town of Eureka Springs, Arkansas—welcomed guests from all over the world. The inn offered sparkling fresh, innovative “nouveau’zarks” cuisine, contemporary interpretations of local traditional cooking. Although now closed, you can still enjoy the satisfying dishes in the 30th anniversary edition of Crescent’s magical book.   Greek Lentil and Spinach Soup with Lemon Makes 4-6 servings Serve this with couscous salad, a plate of sliced feta and olives, some baba ghanoush with whole-wheat pita, and fresh pineapple and Medjool dates for dessert. 1 lb brown or large green lentils, rinsed and picked over 10 cups vegetable broth or water 1 jalapeño pepper, stemmed, seeded and chopped 2 tsp whole coriander seeds 1½ tsp cumin seeds 2½ tsp dried oregano 2 bay leaves 2 medium Yukon gold, russet or red potatoes (1¼ lbs), scrubbed, cut into ½-inch dice 10 oz baby spinach, chopped 1 small butternut squash (1 lb), peeled, seeded, cut into ½-inch dice (about 3 cups) 2 Tbsp olive oil 1 large onion, chopped 2 ribs celery, with leaves, sliced 3 large garlic cloves, finely chopped 2 tsp kosher salt, or more to taste ½ tsp freshly ground black pepper, or more to taste 1/3 cup fresh lemon juice 2 lemons Directions: In a large soup pot over medium-high heat, combine the lentils, stock or water, jalapeño, coriander, cumin, oregano, and bay leaves. Bring to a boil, then reduce the heat to low. Simmer, partially covered, about 30 minutes, until the lentils are tender. Add the potatoes, spinach and butternut squash, re-cover and cook another 15 to 20 minutes, until the potatoes and squash are tender. Meanwhile, in a large skillet over medium heat, heat the olive oil until shimmering. Add the onion, and cook, stirring, until it starts to soften, 3 to 4 minutes. Add the celery and garlic and cook, stirring often, until they soften, 3 minutes. Add the mixture to the soup, deglazing the skillet with a little soup liquid and adding the deglaze contents back to the soup pot. Add the salt and pepper, taste, and add more if needed. Pick out and discard the bay leaves. Thinly slice one of the lemons and cut the other into wedges. Just before serving, stir the lemon juice into the soup. Serve the soup hot, with a lemon slice floating atop each bowl. Pass lemon wedges at the table. Will It Be Okay? with Crescent Dragonwagon
Crescent Dragonwagon and illustrator Jessica Love pair up in this lovely and powerful new edition of Crescent’s classic picture book, Will It Be Okay? Those things which caused us to seek comfort in 1977 still require loving attention today. We are reminded, with humanity, grace, and humor, that, yes—yes, it will be okay.   Oatmeal cookies also make things okay. Crescent shares her tummy-warming recipe with us. Dairy Hollow House Oatmeal Cookies Makes about 72 2-inch cookies When guests checked out of the inn I ran with Ned, my late husband, for 18 years, we sent them off with a bag containing a cookie each, to enjoy on the way home... to extend the pleasure of their stay just a little longer.  Ingredients: 1½ cups white sugar 1½ cups, packed, dark brown sugar ¾ cup butter, softened to room temp ¾ cup vegetable shortening, preferably Miyoko's Creamery Cultured non-dairy Butter 3 large eggs 1½ tsp vanilla 4½ cups rolled oats (not instant) 3 cups unbleached white flour 1½ tsp baking soda 1½ tsp ground cinnamon ¾ tsp baking powder ¾ tsp salt 1½ cups raisins 1½ cups chopped walnuts or pecans Oil or cooking spray  Preheat oven to 375. 2. In a large bowl, using a handheld mixer, cream together the sugars and the butters, beating till creamy and a little fluffy. Beat in the eggs, one at a time. When blended, beat in the vanilla.  3. In a second bowl, combine oatmeal, flour, baking soda, cinnamon, baking powder, and salt. Stir all but 1 cup of the oatmeal mixture into the creamed butter-sugar mixture.  4. Toss the remaining 1 cup of oatmeal with raisins and nuts and stir this into the batter.  5. Oil or spray a baking sheet. Scoop the batter, by rounded teaspoonsful, onto the sheet, allowing 1½ inches between cookies. Bake in the preheated oven for 6 to 8 minutes. Preheat the oven to 350°F. Grease a 9-inch cake pan. Line bottom and sides with parchment paper OR dust it with flour. 2. Stir together the flour, cornstarch, salt, baking powder and baking soda in a mixing bowl until well combined. 3. Combine the olive oil and milk in a separate bowl. 4. Whisk together the eggs and sugar in a large mixing bowl until well combined. Stir in the extract, lemon juice and zest. Stir in the dry ingredients alternating with the olive oil mixture in two or three additions. Use a flexible spatula and mix only enough to ensure that the flour is moistened. 5. Pour the batter into the prepared pan. Bake until the cake is set and golden on top, for 45 to 50 minutes. The cake will have risen slightly, and the top will spring back when lightly pressed with a finger. 6. Cool the cake for 20 minutes on a cooling rack. Carefully unmold the cake onto a serving plate. Allow the cake to cool completely. Dust with confectioner’s sugar before cutting it into wedges and serving.   Variations: Use any kind of nut or non-dairy milk in place of the whole milk. Substitute any kind of citrus juice and zest for the lemon juice and lemon zest. Or use a combination. Orange and lemon juice are common. Use limoncello or vin santo in place of the lemon juice too. Books, Money & Food with Sandra Gutierrez
We continue our chat with Sandra Gutierrez. We talk money, and the re-release of her book, Latin American Street Foods! Sandra is an expert on Latin American cuisine, a journalist, and a food historian. Her work has been widely published in magazines and in newspapers across the country. Links below to her PBS show, The New Southern Latino Table, and to the Huffington Post article mentioned in the episode. Her book, The New Southern-Latino Table: Recipes that Bring Together the Bold and Beloved Flavors of Latin America & The American South, is credited with discovering a new culinary movement and her a new culinary movement and is on exhibit at The Smithsonian Museum in Washington DC. Sandra shares her recipe for Peach Pico de Gallo with us. Fantastic on seafood, pork or chicken! Peach Pico de Gallo Ingredients: 1½ cups peeled, pitted and chopped peaches (not too ripe) ½ cup plum tomatoes, seeded, deveined and chopped ¼ cup minced red onion ¼ cup minced cilantro 1 tablespoon minced jalapenos (seeded, if less heat is desired) Juice of one lime (or to taste) Salt and pepper to taste   In a medium bowl, combine the peaches, tomatoes, red onion, cilantro, jalapenos, and lime juice and stir well; season to taste with salt and pepper.
