Machine House Brewery produces nothing but cask-conditioned beer. I wanted to talk to someone about that particular kind of beer so head brewer/co-owner Bill Arnott seemed like an obvious choice.  

The Shambles is a new, beer-focused restaurant and bar in Seattle. One of the things that sets this place apart from the crowd is the meat. There's more on the menu than beer and meat, but there's no doubt that those two things are taken very seriously at The Shambles. In this episode, we talk with Matthew Brady, one of the founders, about the philosophy behind this carnivorous beer destination.
