John and Paul had the pleasure of talking with internationally renowned Chef John Higgins. Mr. Higgins has been practicing his craft for over four decades. He was Queen Elizabeth's Chef for some time and has worked at so many high-profile restaurants, it would be impossible to list them all. He spent many years - and has just retired - as the Director of Enterprises and Brand Ambassador for the Center for Culinary Arts at George Brown College in Toronto. John relates some great anecdotes, drops a few names, and talks about what it takes to make it in the culinary world. John and Paul had the opportunity to interview Colette Mesher from the Ontario Beekeepers' Association ("OBA"). Colette has a Ph.D. from the University of Plymouth in the United Kingdom. She is actively involved in the beekeeping industry working for commercial beekeepers, teaching workshops, and running her own beekeeping business. She is currently the OBA's "Technology Transfer Program Lead Specialist". This was an extremely informative interview (to say the least). There's so much the average person does not know about bees! This is an interview with Brian Salt from the Salthaven Wildlife Rehabilitation and Education Centre in south-western Ontario. Brian started Salthaven in the 1990s, and it has grown to the point where his team takes care of 2000 wild animals in need of help. This is an eye-opening talk about taking care of wild animals, what threatens them (you'd be surprised), and how Salthaven cares for and eventually releases them back into the wild.
