Backseat Cinema – Lego Ninjago Movie Tim – 2 Paula – 2 Simon – 2 Max – 2    Paula’s Campfire Kitchen Drunken Bean Stew 1 small white onion, finely diced 1 jalapeno, seeded and diced (add an extra jalapeno for more heat) 4 garlic cloves, minced 1 bottle dark Mexican beer 4 cans pinto beans, rinsed and drained 1 Tablespoon brown sugar 1 teaspoon dried oregano 1 teaspoon chili powder 1 teaspoon salt 1/2 teaspoon cumin 1 Tablespoon fresh lime juice 1/4 cup chopped fresh cilantro Add the onion and jalapeno, and saute for 5 minutes or until the onion is soft and translucent. Add the garlic, and saute for an additional 1-2 minutes until fragrant. Add the beer, beans, brown sugar, oregano, chili powder, salt and cumin, and stir to combine. Continue cooking until the beans reach a simmer. Add some milk and a drained can (medium sized) of sweet corn kernels. Mix together until it creates a batter-like texture. Now the secret to a good corn fritter is to make sure the oil is very hot before setting in the batter. Pour some batter into a skillet, then heat for about 2-4 minutes and flip on the other side for another 2-4 minutes. Tim, Paula, Max and Simon are back to breaking down what’s really important when you are packing the van. Camp Kitchen With Paula – Mac N’ Cheese Cooked elbow macaroni Store bought Alfredo sauce Parmesan cheese Mozzarella cheese Cheddar cheese Half and half (half milk/half cream) Optional – chopped onion, grain mustard, curry powder, three bean mix Method Cook pasta according to packet Once pasta is cooked rinse in cold water and allow to cool slightly.  Mix a through all cheese, Alfredo sauce and any other options. Put mixture into large dish and top with more grated cheese Dish can now be covered with foil and kept in fridge or freezer until you are ready to reheat. Episode 3 – The Story of the Tinned Pineapple
The team from Rambling On are back for another Happy Hour in the Camp Kitchen and this time they have a special guest explaining how Rottnest Island and tinned pineapple have a story to tell. Camp Kitchen With Paula 450g Self-raising flour 1/4tsp salt 180ml milk 1tsp caster sugar 80g chilled butter cut into cubes Method Mix flour, salt & sugar together in a bowl. Rub the butter into the flour with your fingertips until it looks like fine breadcrumbs. Add milk slowly and mix to form a dough. Knead lightly on a floured board until smooth.  Shape into a round loaf, brush with milk and cut a cross into the top surface of the dough. Grease a large sheet of foil and wrap the dough. Place on the coals of the BBQ and let it bake for about 30minutes, or in a camp oven with coals under and on the lid.   Paula’s top tip: To test if it’s done, tap on the loaf and it should sound hollow.  Cut into thick slices and serve while still warm.  Serve with butter and Golden syrup or your favorite jam. Episode 2 – Getting Lost
The Rambling On crew jump into the podcasting caravan to talk about the essential features of a quality caravan park and why you should always carry a paper map. Camp Kitchen With Paula Paula Gardner shares her recipe for Thai stir-fry. She reckons it’s great but Tim wasn’t so sure… Here’s the recipe! 1 chopped onion 1 chopped garlic clove 1 chopped red capsicum 1 chopped zucchini 1 chopped carrot 1 chopped celery stick 1 can of corn 1 chopped lemongrass stick Half a bunch of chopped coriander 1 can of coconut milk/cream 1 dessert spoon of curry paste 100 grams of tofu 1. Fry the onion until soft, add the curry paste and stir through. 2. Add the rest of the vegetables, except the zucchini. Stir until soft and then add the garlic, zucchini and corn, and stir through. 3. Add the can of coconut milk/cream and simmer for 10 minutes. 4. Add the tofu. 5. Serve with rice. Paula’s top tip: Save time by pre-chopping the veggies and storing in ziplock bags in the fridge or freezer. Driving Songs Each show, the crew share their favourite A-Z of driving songs.
