Navigating the Pandemic
Guest Harriet Mansell, Chef and Owner of Robin Wylde and Lilac Restaurant & Wine Bar   Harriet Mansell grew up in Devon and studied History and Politics at Cardiff University. She had ambitions to open a restaurant since the young age of 13, but took a different route of getting there. In her early twenties she worked in a variety of roles before deciding to commence formal training at Tante Marie Culinary Academy. After a few stages at restaurants such as Noma in Copenhagen, and Dinner by Heston, she then entered the superyacht industry. This is how she met Justine, who placed her in a Chef role. Following a few years in the superyacht industry, Harriet took a step back to recalibrate and determined that then was the time to throw it all in to opening up the restaurant she had always dreamed of. After coming back to the UK and discovering a pop up location to rent, the rest is history.  Robin Wylde officially opened in October of 2020, and Lilac Restaurant & Wine Bar followed in August 2021. Over this time, some awards and accolades have been won, including: Winner of the 2018 Antigua Yacht Chef competition, Local Business Rising Star Awards 2021, both restaurants being included in the 2022 Michelin Guide, nominee in the Chef to Watch category at the 2021 National Restaurant Awards, and represented the SW in the 2020 Great British Menu. Harriet is currently working on lots of exciting projects for the year ahead, including featuring on the chef line up at Wilderness Festival this year.   In this episode Justine explores the amazing journey Harriet has had, and just how much she has had to navigate through the pandemic, while opening two businesses, and the realities behind that. With Guest Samantha Wills.  At just 21, Samantha Wills founded her own global self-titled jewellery company. Starting from her kitchen table in Bondi with an in-demand jewellery party-plan business, Samantha gained her first big break at Australian Fashion Week in 2004. She was thrust into the spotlight as a stream of celebrities were photographed wearing her pieces - Drew Barrymore, Rihanna, Taylor Swift, Pink. But when some of her earrings were selected to appear in Sex and The City, the young designer relocated to New York to build the brand on an international stage. After Samantha’s early recovery from $80k debt she turned over her first million by age 26. The business went from strength to strength, building a cult following. But in 2019 Samantha stunned the world with the brand’s seemingly sudden closure, at its peak as a multi-million-dollar company.  Samantha, after many years of ignoring symptoms of pain, finally took herself to a doctor and was diagnosed with endometriosis and was operated on immediately. Samantha shares openly about this so that it may this serve as an important reminder to always listen to our bodies, no matter how busy we may be. In our season finale of Season 1, we have guest Serena Cook who joins Justine to share all about her journey leading to founding Deliciously Sorted Ibiza in 2002, her concierge and events company for the A list in Ibiza. And talking all about this fortnight's topic of Delegation, when it’s the right time to take on help in your business and recognising that you can’t do it all.  Serena is a self proclaimed “manager of expectations” on an island where guidance and insider knowledge are essential. The company won Best European Business in 2015, she is the exclusive agent for David and Cathy Guetta’s Villa Titanium, (top 10 villas in the world, Forbes List), she has written Ibiza columns for Tatler, Pacha and Ibiza Style, owns Casa Delicious, contributed to the Ibiza coffee table book Outstanding 100 and launched Assouline’s ‘Ibiza Bohemia’. In 2008 she co-founded the Ibiza Preservation Fund to preserve the islands' exceptional beauty and natural value, raising significant funds and making real change on the island, not just to it's wildlife and land but also to it's residents and their livelihoods too. Serena's background is in the restaurant world. From the ages of 20 - 23 she owned and ran Odeon, a Mediterranean restaurant in Bogota, Colombia. When the politics got nasty she returned to London working for Oliver Peyton in the events team at The Atlantic and front of house at Coast. At 25 she opened England’s first certified organic cafe in London with Sheherazade and Zac Goldsmith. Her journey is both fascinating and truly inspiring.
