Jerky Freaks 009 : A Quick Update
It's been a long time since Jerky freaks has posted a podcast episode. Today we are sending an update as to what has been going on, what we have been up to and what we are doing in the near future. Jerky Freaks is going through a major change and is intending to share it with you.  Jeremy explains that Jerky Freaks is transitioning into more of a business topics podcast as opposed to a podcast about how to make beef jerky. Due to recent fan input, this seems to be the appropriate direction to go. We will still post beef jerky recipes here on the site. We are a beef jerky authority, for gods sake. So anything and everything beef jerky, that's what we will discuss. That is why Jeremy is taking the Jerky Freaks podcast in a bit of a different direction as he explains in the podcast. I do believe I ate enough to feed a small village in africa. With all the food and overstuffed bellies, I couldn't bare talk about jerky recipes here today. That is why I chose to give 5 excellent tips about making beef jerky. I am getting excited because we are getting close to double digits here with the Jerky Freaks episodes and things are slowly rising. Thank you so much for listening and sharing this program. It means so much to me. 5 Epic Tips To Make Better Jerky Tip #1: Know your meat In order to make the best jerky you can, you must know your meat. Tip #2: Cut the fat Be sure to remove all fat, tendon, gristle and membraneous tissue from the meat prior to dehydration, as these unsavory bits can turn rancid quite quickly. Tip #3: Don’t feel constrained by traditional marinades Everyone who makes their own jerky has their own marinade standards. Tip #4: Keep your jerky bacteria-free According to the U.S. Department of Agriculture, jerky has been linked to illnesses caused by Salmonella and E. Coli. Jerky Freaks 006: Getting Perky And A Damn Good Barbecue Jerky!
In this episode of the Jerky Freaks podcast, I share some changes going on around the jerky freaks studio. I also talk about a not so Damn Good experience with a BBQ beef jerky. This unsatisfied experience left me only one choice. That was to put together a real Damn Good BBQ jerky recipe for you. I will cover a BBQ jerky recipe that I posted earlier this week. JerkyFreaks 005: Easy Garlic Pepper Beef Jerky Recipe.
Recently I was digging through an archive of old jerky recipes when I stumbled upon this gem. This is an easy beef jerky recipe as far as simplicity and ingredients.  I love pepper and peppered type recipes and I also love garlic, who doesn't love garlic anyways. In this episode of the Jerky Freaks show I combine Pepper and Garlic to make one heck of an easy beef jerky recipe. Garlic Pepper Jerky Recipe Ingredients: 2 lbs of beef 1 tsp minced garlic 1/2 cup of soy sauce 1/4 cup worchestershire sauce 1/2 tsp black pepper 1 tsp garlic powder Putting It All Together Trim the flank steak of any excess fat, place in a zip-top bag, and place it in the freezer for 1 to 2 hours in order to firm up. Remove the steak from the freezer and thinly slice the meat with the grain, into long strips. Place the strips of meat along with all of the remaining ingredients into a large, 1-gallon plastic zip-top bag and move around to evenly distribute all of the ingredients. Place the bag into the refrigerator for 12 to 24 hours. Remove the meat from the brine and pat dry. Evenly distribute strips of meat onto trays of food dehydrator. Check out food dehydrators that I use here. I recommend drying 4-6 hours. I enjoy my jerky a little moist, not breaking. If using a commercial dehydrator, follow the manufacturer's directions. Once dry, store in a cool dry place, in an airtight container for 2 to 3 months. If you need help finding a top rated Commercial Dehydrator than visit Amazon.com. Bonus Tip:  How to make beef jerky a little softer? One method is to slice the jerky a little thicker as well as reduce the drying time a bit. Second method would be to add extra sugar to the marinade. JerkyFreaks 004: Sweet and Spicy Beef Jerky Recipe. Meat Slicing Tips.
Welcome Jerky Freaks. In today's episode we get spicy with this killer Sweet and Spicy Beef Jerky Recipe.   Nothing goes together like the flavors of something sweet with something spicy. A classic combination of chili pepper and cocoa is to die for. That is why I needed to bring out this recipe for everyone today. If I had to choose a favorite style and flavor of jerky it would be sweet and spicy, my favorite! Sweet And Spicy Beef Jerky Recipe Ingredients 2 pound lean beef sirloin tip, sliced into 1/8 inch strips 1 tablespoon onion powder 1 tablespoon garlic powder 2 teaspoons cracked black pepper 1/2 cup brown sugar 1/2 cup soy sauce 1/2 cup Worcestershire sauce 1/4 cup pineapple juice 1 teaspoon cayenne pepper Putting It All Together Simply combine the basic ingredients in a large bowl and refrigerate overnight. Trim all the fat, gristle, and silver skin from the beef. Slice the beef into thin strips 1/8" to 3/8" thick, against the grain. Set the strips down in a large container like a bowl, flat tray, or a zip lock plastic bag. Pour the marinade over the meat and mix well. Store the meat in the fridge for about 4 to 8 hours, or over night. Making Sweet and Spicy Beef Jerky in the Oven Preheat the oven to 160°F / 71°C, or the lowest setting it will go. Remove the beef slices from the container and layer the strips in a single layer on a baking tray, or drying rack on top of a cookie sheet. Make sure the beef strips don't overlap and have a little space between them to enable good air circulation. Arrange the oven shelves leaving at least 4 inches of space from the top and bottom sources of heat to achieve even heating. Place the strips in the oven to start dehydrating them. Making Sweet and Spicy Beef Jerky in a Dehydrator Preheat your dehydrator to at least 141°F / 60.5°C and up to 165°F / 74°C. Place the strips in a single layer on the dehydrator trays. Be sure to leave some space between the jerky strips for sufficient air flow. If you are not using wire or mesh trays you may need to turn the beef jerky over once in the middle of the drying process. Dry the beef jerky for 4 to 6 hours. If thicker strips of meat are used it may take longer. Finishing the Jerky To test the beef jerky remove a strip or two from the oven racks or dehydrator trays with clean kitchen tongs. Dried beef jerky strips should be chewy but still tender. When bent, it should be flexible enough not to break but it

Welcome Jerky Freaks. In todays episode of The Jerky Freaks Show we talk about making an authentic Teriyaki beef jerky recipe.   Teriyaki is undeniably the most popular flavor of beef jerky. We have a Teriyaki beef jerky recipe that is authentic and delicious. This authentic recipe will take your taste buds on a ride through the orient. If you enjoy the Original 'classic' beef jerky. Check out my classic beef jerky recipe. Teriyaki Beef Jerky Recipe Ingredients: 2 lbs. of meat 1/2 cup soy sauce 1/4 cup Worcestorshire sauce 1/2 cup orange juice 2 tablespoons honey 2 tablespoons ground ginger 2 teaspoons garlic powder 1 teaspoon minced garlic Putting It All Together Simply combine the basic ingredients for the teriyaki sauce in a large bowl and refrigerate for about an hour. Trim all the fat, gristle, and silver skin from the beef. Slice the beef into thin strips 1/8" to 3/8" thick, against the grain. JerkyFreaks 002: The Most Unbelievable Classic Beef Jerky Recipe. I Love It.
Prepare to make the most unbelievable classic style beef jerky recipe known to man. This simple recipe yields a delicious mouth watering flavor.  This Recipe is what I like to call an Original or cowboy jerky.   Jerky Freaks... Prepare! Today's episode of The Jerky Freaks Show I talk about how to make a Classic beef jerky recipe or as I like to call an Original jerky. The Original jerky reminds me of just a good ole steak. There shouldn't be too many added ingredients or flavors. I like to envision this jerky as being something that would of been made by the cowboys back in the day. Classic Beef Jerky Recipe Ingredients: 2 pounds flank steak 2/3 cup Worcestershire sauce 2/3 cup soy sauce 2 teaspoons freshly ground black pepper 2 teaspoons onion powder 1 teaspoon liquid smoke Once you have your ingredients setup you are ready to make the best classic style beef jerky recipe.
