Take 2 Episode 7: Non-Alcoholic Beer (Non Homebrew Samples)
First a disclaimer: We recorded this episode with an intention of learning more about non-alcoholic beer (excluding Kombucha, etc. Just focused on beer). However we met some resistance in the commercial sector with brewers not willing to share their process/techniques. We understand completely, this is a new area of beer and from what we learned process is more crucial here. We did not have any homebrew examples to taste, however did have some input from a few brewers on their practices. This is not the best episode we have recorded, but probably the most talked about one from our side. Episode #43 Low Oxygen Brewing with Bryan Rabe

Bryan is one of the authors of the On Brewing Bavarian Helles: Adapting to Low Oxygen Brewing paper that has sent ripples throughout the homebrew community, even reaching into the American craft beer industry. Received with mixed feelings among the people there’s no denying intrigue it brings. The paper lays out step by step in replicating an authentic German Helles with the elusive “it” character that led this group on a wild goose chase to decipher german brewing text. The findings were that oxygen plays a key role in the detriment to malt and hop character not only post fermentation (as all have already accepted) but also on the hot side in the brew house. While this was originally intended for those german lagers the techniques discussed can be applied to any beer style to preserve flavor stability. Episode #39 Road trip to BierKeller!

We’re sitting down with Columbia native and well traveled German expert Scott Burgess, and talking about his new venture BierKeller Columbia.
