https://chefordeath.com/wp-content/uploads/2020/04/CoD-charlie-mani.mp3 Chef Charles Mani, from Chennai on the Indian coast, gained critical acclaim at Babu Ji and as executive chef of Badshah, both in New York City, where guests specifically pilgrimaged for his crispy Urban Cauliflower tossed with tomato chili oil. The much buzzed about dish is a staple of Urban Village’s seasonally changing dinner menu as is his signature Urban Butter Chicken and Classic Coconut Curry. Mani is sensitive to the wide varieties of guests and his coconut curry is vegan and gluten free, as are many other dishes. “We’re bringing the Indian street food we love to the table in a fine dining way,” said Charles Mani, Executive Chef of Urban Village Eat & Sip. “A lot of people think of Indian food as spicy and heavy with a lot of cream. I want to change that perception with my food. We spend hours developing the spices and layering flavors in a delicious and light way.
