Episode Info: Monday Curry This is a cheap and delicious, quick Monday meal that uses up cooked chicken or beef from your Sunday lunch. Serves 4 Ingredients 1 tbsp sunflower, olive or rapeseed oil 10g butter or a large knob 2 medium onions, chopped 2 medium sized potatoes, diced 1 medium carrot, diced 1 stick celery, chopped 1 red pepper, chopped or a decent handful frozen About 60g frozen or fresh green beans or peas About 800ml good stock, made from the carcass of the chicken or beef bones 2 rounded tsp medium curry powder 1 tsp garam masala 1 tsp ground cumin 1 tsp dried parsley Half tsp salty About 350g cooked chicken or beef A handful spinach Add 2 tbsp tomato purée if using beef, when you add your spices Melt the butter and oil together in a large pan and add the onion, carrot, potato and celery. Stir the vegetables in the oil and butter and sweat over a low heat for about 10 minutes. Add the beans or peas and peppers and stir well Stir in the spices, parsley and salt. Stir in the stock and bring to the boil then turn down the heat and simmer for about 25 minutes. Add the cooked chicken or beef and the spinach and simmer for 10 more minutes. Allow to cool and reheat as necessary for the best possible flavour. Serve with boiled rice. Add about 20g creamed coconut after stirring in the cooked chicken for a creamy taste if you wish.
