That's before you even try any of the recipes." Wow! What a ringing endorsement. So let's kick things off with a bit of geography lesson. Where is Laos and what defines the cuisine?James: Laos is a land locked country wedged in the North East of Thailand, between Thailand and Vietnam with Cambodia kind of like adjacent to it. Being a land lock country, you know there's a lot of preservation involved. Like fish sauce, and stuff. Unfiltered style fish sauce called Padaek.
