Podcast 5 with Tom Ray, Brew Master @Mourne Mountains Brewery
In this Podcast Kieran chats with Tom Ray of Mourne Mountain Brewery about his own background and the rise of micro breweries in Northern Ireland and how the process of micro brewing is closely associated with rural areas and use of local ingredients. To date there are 27 microbreweries in Northern Ireland. SRC is working with the brewery on a food and beer matching project. Tom has been in the industry for 21 years and gives a honest and fascinating insight into his passion for the business and as he coins it “his wonderful world of beer” He provides listeners with an insight to the company’s current range of products and how they might be matched with food. Mourne Mountain Brewery’s current beers are: Mourne Gold, Mourne Mist Pilsener, Red Trail IPA, East Coast IPA, Big Rock Wheat Beer, Chocolat Chaud Belgian Stout – with seasonal products such as Pumpkin Porter and Noel Spiced Lager.
SRC provided Mourne Mountains Brewery with one to one and group mentoring sessions at Mourne Mountain Brewery Warrenpoint. This involved; a series of organoleptic analysis to identify the dominant flavours from the beer to match with appropriate foods; creating tasting platters to help promote the “matched” products; suggesting recipes using five Mourne Mountain Brewery beers. The results were recorded in a beer & food matching matrix. Thanks to Seth and Connor of the Rostrevor Inn for hosting the tasting event.
